i baked something with loads of sugar.

i have this thing with cooking.
i don't particularly enjoy it.
especially if i have to deal with raw meat and then an hour later try and eat it.
it's all i can do to not picture it, still raw, as i'm chewing.
i know, it's weird.

however, i could make 5 desserts a day.
and never get sick of it.
i completely adore baking.

so, when we eat with friends, it's ushze what i sign up to bring.
this momma could browse desserts, pin desserts, drool over desserts every day.
whip cream. chocolate. cream cheese. lemon. creamy, tart, crunchy, sweet and tangy.
i love it all.

ok, seriously.
enough of me and my awkward fetish for desserts.

here's what i made for a bbq with friends a couple weeks ago.
normally, this isn't a dessert i go goo-goo-gaa-gaa over.
but for two reasons, my tastebuds were hoppin around like 14 year olds at a katy perry concert.
one: the crust has sugar AND pretzels in it.  totally has a salty/sweet thang goin on.
and two: personal dessert dishes.  who doesn't want their own cute little dish? hello. i do.

the: crust
the: filling
the: filling on top of crust
the: top
the: end
seriously, these were like too much goodness.....no one could even finish their little dish
oh yeah, and i had one for breakfast the next day.
you judgin? don't be judgin.

now, go make one fo yo kids.
make one fo yo man.
make one fo yo neighba.

so there i was, with a 2 course dinner on the table. {and a smile in my heart}

i have this thing, this struggle, this issue: cooking.

yes, i grew up in a home seeing my mother cook, from scratch, on a regular basis.
yes, i grew up enjoying her homemade meals, and arguing about who's turn it was to do the dishes.

but there's a missing link from my mothers talents and abilities in the kitchen to my own.

...

it's not just my dislike of cooking though, it's my constant failure while cooking, that creates this barrier around the stove, the cute kitchen aid mixer, the rice steamer, and all those other random kitchen appliances. there's a line between me and them, and it's so difficult to cross.

i'm always making dumb mistakes.

i've set pyrex pans on a hot stove top {cue: pyrex shattering all.over.the.kitchen}
i've tried to melt the butter in the microwave because the recipe said "softened butter" but i failed to realize i can't melt the butter with the eggs already in the bowl too {cue: scrambled eggs with a side of melted butter}
i've put tablespoons of salt, cumin, or paprika in instead of teaspoons {cue: it doesn't taste good}
i've baked cinnamon rolls in too small of a pan, that each one overflowed into the oven {cue: giant cinnamon rolls stuck to oven}
and,
the list
could
go
on.

however, something happens when i make those silly mistakes.
and i know that most of you would say, "me too!" and "that's ok, just keep trying!!!".....
and, typically, i'm quite the fan of laughter, but when i mess up in the kitchen? laughter is not my go-to form of reaction.
i've been known to stomp. and even cry.

i get SO discouraged.

i try to make these meals, from recipe books, online sites, or pinterest, and i get overwhelmed......so then i just end up not making anything. i'm sort of ALL OR NOTHING.

but then a miracle happened.
kansas city stepped up, and finally got a couple of these suckers:
yeah yeah. i know.
trader joes is so yesterday for most of y'all.

but for me?
i'm just gettin started, baby.

here's why:
first of all, i convince myself its practically like whole foods and everything there is JUST HEALTHIER.
second of all, they have like $5 wine.
and third of all, everything there is yummy.

...

lately, my discouragement in the kitchen has been raging like a virus trapped in a mcdonalds play area {HA! rethinking lunch plans, mommas?!! sorry....}

but really, each week i'm all like
"mr leif, i'm so going to meal plan like a super kitchen warrior princess, i mean seriously, i've found so many recipes i wanna make"

and then he gives me his lovely use of silence.

and then i reply to his silence by talking again, "so like, on sunday, i'm going to write up a menu and then i was thinking we could all go to the store on sunday together!!!!!!!"

and then and then and then.......

but really, and then i don't do any of it.
so monday rolls around and i scramble around to make a meal.
i try to get to the store, try to cook with my toddler climbing up my leg saying up up up, and try to stay calm and "be an adult" amongst the chaos called momma's makin' dinner.

those are usually all hot mess experiences.
which end in an even bigger hot mess: my finished product.

sometimes it doesn't turn out, sometimes it tastes like yuck, and sometimes it doesn't even get completed because i quit during the middle {that's usually the one that involves my tantrum}.

regardless, mr leif {poor guy} often comes home to a very discouraged wife, and no dinner.

bless his heart. he loves to cook {and he loves to rescue his wife}
so...........................he often times rescues me by cooking. or going to get a frozen pizza.

but.
the other night,
i made the most AMAZING FROZEN PENNE PASTA DINNER from trader joes.
[i can't remember its actual name]

and, ALL I HAD TO DO WAS...................
1. take package out of freezer
2. add a teency bit of water and a smidge of butter
3. stir and put a lid on it.

then i served it with a salad.
and,
wait for it.......
wait for it................

i felt like the BEST HOMEMAKER EVER!!!!!!!!!!!!!!!!!!

seriously though.

as usual, mr leif called me on his way home, and so i knew exactly the time frame i was working with. and when he walked in the door, i was able to serve a pretty rad pasta, and salad. TWO courses.

and the best part, i felt happy. i was proud of myself.

and then i said to my mr, "this was SUCH a positive experience, i actually had FUN, and felt competent, and excited to serve dinner!!!!!!!!!!!"

he totally gave me his approval to make trader joes dinners :)
{and thank goodness, he's never really requested/expected dinner on the table anyways...}

i know i'm totally not doing the cool thing these days which also happens to be the healthiest thing, but making some sort of parsley-flaxseed pesto pasta just isn't in the cards for me right now. and I AM OK WITH THAT!

...

do i want to make these half premade dinners forever???
NO!
do i want to own that kitchen??
YES!
but, it's gonna take time.

a dear friend of mine told me the other day to start watching cooking shows.
not to follow their recipes, but to watch them cook!
to pick up on some chopping, mixing, and other random techniques.
i love it.

thank goodness we have cable now.
i mean, it's practically in my job description now.

...

well, it's almost saturday folks, and momma's off to tJoes in the mornin, to get her some supplies.

now, in theme with my pinterest post from earlier,
here's a happy little collage i put together, to keep things happy round here :)
i should totally pin this under the category, "things i've made"

this is for you, working moms!

.....heck, its for all moms.

so mr leif and i (mostly mr leif, but i help....a bit...) have started somthing new.
we've been trying it for two weeks.
and it's been fabulous.

on sundays, we plan our meals for the week, and also prep them.

we try to do at least 2-3 crockpot meals within the mix.....nothin like comin home from work to a yummy smelling home :)

to prep the crockpot meals, we prepare the ingredients and put them each into a crockpot liner bag, then into the fridge they go!............and in the mornings, we just plop the bag into the pot and set'er on low :)

chopping, stirring, pouring.........it's made our weeknights yummier, and easier too :)
so here is romes and i on our sunday night prep party in the kitchen.
i was making chocolate revel bars.
mr leif was prepping our all-the-fat-trimmed-off-beef/potato/carrot/celery stew.

we had a snow day today.

i got to smell the stew all day.

and i may have eated half the pan of bars. i mean, i did eat half the pan of bars.

i have no self control.

a pre-baby confession...

...you know, back when i "had all the time in the world"

well, back then i would browse ohdeedoh, a lot.
i would save pictures and links for inspiration.
inspirational decorating tips, diy projects, recipes, etc.....
and this morning, i checked on my old friend, the doh, and found this:

click on picture to take YOU to the recipe :)

how cute, ey?!

yeah, i'm gonna try it.

you should too!

has chipotle always been...

...this good?
seriously.
i mean, i think i've only eaten there twice before last night.
once in college. bad memory, thought it was gross. and way too much food.
and once when i was preggs. with sammy. and, then it was just 'ok'
BUT now, ohhhhhhh now???
now, i'm in love.
especially with the carnitas tacos. yum?????????
last night. we buckled up little rome.
and headed to chipotle, a pick by mr leif, for his 27th birfaday.
romedog loved the excitement. he was soooooo giddy......
and mommy loved her carnitas! (said with my spanish accent, just like tio! - that ones for my sis!)
cheeeeeeeeeeeeeeeeeeeeeeeeeeese.
roman, contain yourself. seriously. chipotle is no place for wild animals.
posin with dad. cuz he just turned the big 2-7.
happpppppppppppppppppy birthday!!!!!!!!!!!!!!!
and seriously. i need some MAJOR rescue 9-1-1 in the kitchen.
i could barely get this white bettiecrocker cake to stack.
silly me didn't wait until it cooled down.
goodness...........i'm always a complete mess in the kitchen.
BUT i'm learning, yes........with every mistake, i'm learning.
and besides. mr leif didn't care that it was totally leaning off to the right.
mr leif 27. me 26. romes 1 month.
all three of us have birthdays within a month!
cheers to another great year ahead..........
and cheers to chipotle.
dangggggggggggggggg it was good.

i would be a really good cook...

...if this was my kitchen.
seriously, mr. leif:
this is really all that's missing from my issue(s) with cooking:
a sweet kitchen.
i mean, come on.....
can you imagine the pies and coblers and cakes and cookies i would bake up in here?
i'm not so sure which main courses i would perfect, but you and i both know, it could take more than a new kitchen to help with that disaster :)
so for now.......
i'll be a pro-baker, IF i were inhabiting this amazing space.
just so you know...

our house is like......

almost freaky right now.
i mean, seriously. check out my view as i peer through about 86.7% of the windows in our house...
ahhhhhhhhhhhh............icicles are e.v.e.r.y.w.h.e.r.e
(ps. i am not sure how to spell it, icicles or icycles??)
(pps. i am to lazy to look it up on dictionary.com or spell check in micro word)
(ppss. i am assuming since it is not some sort of device with a wheel, like bicycle or tricycle, that it is spelled icicle. but you can totally check me on that assumption.)
i asked mr. leif about them and the danger to our house and our gutters
(or my head when i walk outside and might just get totally stabbed).

of course, he had some long, very smart sounding, answer.

but, because. i was stalking this blog, while he was explaining, i only recall snippets of something about our insulation or letting heat out or......heck, i don't really remember what he said. so............i guess iwill conlcude that icicles are nothing more the one of the most beautiful things God has created ;)

oh yeah, and yesterday i had a snow day. yep! no work for me! it was such a great day :) i can really see myself as a stay at home wife. i slept in, visited a friend and her new baby, went to the gym, went to the grocery store, did some laundry, baked cookies, ate 5 and 1/2 cookes, and then had the other 1/2 of a cookie, and then i made mr. leif dinner.

he likes it when i cook for him, he is always the 'cooker' in the house. i usually mess up and get frustrated, but lately i have been really comin out of my shell in terms of cooking.....

speaking of shells..........

i made stuffed shells for din din.

i got the recipe from this site, and added some ground turkey and a yellow onion, and of course loaded these suckers with way more cheese than called for ;)

ok, off to wake my sleeping prince from his saturday afternoon nap!

yum.

after much talk about an evening of holiday baking.
after paging through recipe upon recipe.
after coming up with our grocery list of ingredients.
after stirring, mixing, pouring, melting, spreading.
finally....
my sweet friend colette and i created three delicious holiday goodies :)
melting the caramels for the caramel peanut bars...

squeeeeeeeze the white chocolate on the pumpkin spice bars...

roll. dip. place.
the yummy yum yum ginger snaps...

meanwhile, the guys were doing 'man things' in the garage...
but we ended the evening with wine, pizza, and of course.........dessert :)

peace, xoxo, linds
